Nothing is better than a cupcake in our daily life, simple if you are in a hurry, rich if you feel a little cold in a winter afternoon, with strawberries on a perfect beach in Greece.. The mother of a good friend of mine in Italy used to call "generi di conforto" all those wonderful cakes that you'd bring with you when you go on a trip or just on your sofa.. for me cupcake is a little bit like that.. something good, cute.. that will come with you on your daily life!

cookies nutella e gocce di cioccolato
ingredienti:
225g burro
400g zucchero
2 uova
240g Nutella o crema al cioccolato spalmabile
440g farina
2tsp bicarbonato
1/2tsp sale
70g gocce di cioccolato
come..
mescolare zucchero, burro, Nutella e uova. poi aggiungere gli altri ingredienti e mescolare con le mani (o gancio) fino a formare un impasto. creare delle palline schiacciate e metterle a cuocere per 10/12 minuti max in forno caldo 175C

torta rustica di scarola, uvetta e pinoli

torta rustica from Naples is amazing. Inside just scarola salade, golden sultanas, pinenuts ans smoked scamorza cheese. how to... wash scarola then reduce his volume in a large pan with a little salt for 10 minutes. mix it with sultanas, pinenuts and scamorza cheese in cubes. I use to do my brisé dough but U can buy a ready dough at supermarket. Roll dough, fill it with salade mixture, cover with dough again and bake it in preheated oven for 30 minutes at 180C.

cake matcha, raspberry and white chocolate
ingrédients:
4 eggs
100g white chocolate in small cubes
300g fresh or frozen raspberries
240g caster sugar
240g butter at room temperature
240g flour + 10g baking powder
2 tbsp matcha powder
preheat oven at 175C. mix butter, sugar and matcha powder. add eggs and mix again. mix flour with baking powder, raspberries and white chocolate and add gently to batter. bake in preheated oven for 30 minutes or more.
