Sugar creations

Ahi ahi.. so many burned fingers when we worked sugar at school.. ! The sugar dough looks so innocent but be careful because is very hot and if you don’t want to damage your hands you better put special gloves that will protect your skin! Besides this little detail working sugar is very funny and creative, you can make beautiful sculptures, every kind of flower, leaves, objects…  it depends on where you want to put your little sculpture, for what kind of event.. and so on.

For the final exam I made a vase with flowers inside, I was so proud of myself and still I am but I didn’t win the competition.. oh la la.. life can be so unsweetJ

Tarte au citron

La tarte au citron est l’un des desserts le plus connu en France. Je préfère utiliser des citrons frais et non traités pour donner un vrai gout de citron à la crème et mettre les zest dans la pate aussi, pour harmoniser la saveur finale du gâteau. Pour un effet plus somptueux vous pouvez décorer votre tarte avec la meringue italienne, elle donne un coté soft et tendre qui contraste bien avec  le zing éveillant du citron!

Brownie


I love brownie, the classic one, just flour, sugar, eggs, butter and chocolate, that’s it. I’m not saying that there are not other versions, but the simple one for me is the best because you can really savor the chocolate, bite the chewy texture and smell the richness of this American masterpiece.


I bought a wonderful brownie pan on a UK website and now is impossible to make a brownie without it. Is made with a nonstick material and the shape helps you to take out your cake after baked.  When you buy your material on shops or on the web, make sure is good quality, a first-class pan is as important as a fine chocolate!

Camogliesi


Camogliesi are little cakes from Camogli, a beautiful village in the coast of Liguria. Is name Ca’mogli means “wife’s house” because in this fisherman’s village men were working on fishing boats all the time and wives while waiting their homecoming I like to imagine that they were eating these small lovely cakes!

There are different kinds of camogliesi, but my favorites are with orange zest and chocolate with rum. The one with orange zest has a base made with almonds and orange, the one with rum is similar to a cream puff with a rich filling of chocolate with rum and is covered with dark chocolate. I like both, the first one with a cup of green tea, the second one with black coffee or.. just like that, watching the sunset and savoring the nightfall..

Happy New Year!


Just few months ago my friend Hitomi suggested to me to create this blog, we were in Angelina, a famous pastry shop of Paris, drinking a hot chocolate and eating a Saint Honoré..  I thought it was so technological to do something like that, only after I realized that is very easy and most of all so funny. It’s really amazing how many people from the entire world are interested in cakes, for me is such a pleasure to share my work with passionate people from all these fascinating countries.

Leo’s Pizza

My friend Francesca lives in Pegli, a small town close to Genoa, near her house there is my favorite pizzeria of Liguria. When I arrived to her place the other night she said “for you is the one with salsiccia right?” oh yes, I was dreaming about it since a while, when her husband came home with pizzas we just jump on them, so please forgive me if I didn’t dedicate too much time to the photo shooting.. but pizza of Leo’s pizzeria just can’t wait!
